Meatballs and Spaghetti

  • 400g minced meat
  • 1/2 cup Pumpkin Seed Meal
  • 1 onion
  • 1 egg
  • 2 tbs tomato paste
  • jar tomato pasta sauce (gluten free)
  • spaghetti (or rice noodles for gluten free)
  • salt & pepper
  • sprigs of parsley

Combine your choice of minced meat, pumpkin seed meal, finely chopped onion, egg, tomato paste, salt and pepper to taste in a mixing bowl. Roll tablespoon lots into balls and refrigerate for 10 minutes.  Bring jar of tomato pasta sauce to gentle simmer in sauce pan and then gently drop in meatballs. Gently cook, stirring occasionally for 10 mins. Serve on cooked pasta with a garnish of fresh parsley.
