Potato Salad

  • enough potatoes
  • onion
  • Pumpkin Seed Oil
  • apple cider vinegar
  • salt & pepper
Gently simmer scrubbed potatoes in their jackets in salty water, until tender. Peel potatoes and cut into slices approximately 8mm thick. Add finely chopped raw onion, pour enough pumpkin seed oil to coat the potato and gently mix. Then sprinkle with apple cider vinegar, season to taste and gently mix again. Serve warm or cold and enjoy!
