Pumpkin Soup
Ingrediends:
Method:
- 1Kg pumpkin diced
- 1 onion
- 1tbs butter
- 1 tsp nutmeg
- zest 1/2 orange
- salt & pepper
- cream
- pumpkin seed oil
- chives
Gently cook onion in butter for 10 minutes. Add diced pumpkin and water to cover. Cover pot and simmer for 45-60 minutes. Blend soup in the pot with hand-held food processor until smooth, then add nutmeg, orange zest, salt and pepper to taste. Serve hot in a bowl with a dollop of cream, drizzle of pumpkin seed oil and a sprinkle of chives. It will look gorgeous - a great winter warmer!
